We aim to source much of our produce locally, and are proud to hold the Pembrokeshire Produce Mark.

Our smoked salmon, smoked trout and smoked chicken all come from the Hillside Smokery, situated in Crymych, within the Preseli Mountains in Pembrokshire. Hillside Smokery use their own or local ingredients and traditional methods, with much of the work being done by hand. The result is Gold Medal Winning smoked trout fillets, hand-smoked over oak then cooked before being allowed to mature until they are carefully vacuum packed, and Gold Medal Winning oak roasted smoked salmon. www.hillsidesmokery.co.uk

We get our clotted cream from Drim Farm in Narbeth, who've been shortlisted for Taste of Wales awards for their products from the farm's herd of Jersey Cattle. If you'd like to take some home with you, visit their farm shop - call the farm on 01437 541295 for directions.

Mark the Shark provides us with our fresh fish. He has a little van which he takes around north and south Pembrokeshire. If you'd like to catch him, give him a ring on 01646 690267.

Our rare roast beef comes from G Davis and Sons butcher in St Davids. The beef is from Welsh black cows from around St Davids - you may see some in pasture in fields around the Cathedral.

Our fresh meat from Pembrokeshire sheep and cows are from AJ Rees in Narbeth, a traditional butchers who have recently been named as the Daily Telegraph Best Traditional Business in a UK-wide competition. Telegraph Assistant Editor Andrew Pierce commented on Andrew "He is not just a butcher, but a one-man local food campaign.... He has been a pioneer of the local-for-locals ethos. Eat your hearts out Jamie, Hugh and Gordon, Andrew Rees was there first".

We use a number of delicious local cheeses including Pant Mawr goat's and cow's milk cheeses and the superb Perl Las - a delicious creamy blue cheese great both in cooking (e.g. with a celeriac soup) and to eat as it is.

The Penlon Cottage Brewery provide us with our beers - they use traditional methods using hops from their own yard, and any leftover grain is fed to their livestock. Penlon have recently won a True Taste award for their light ale www.penlon.biz

Our dairy ice cream is from another local company, Mary's Farmhouse Ice Cream in Crymych. All their ice cream is additive free, and made with local milk. www.marys-farmhouse.co.uk

Finally, our jams and chutneys are all from St Davids Country Market (aka the WI). You can find the market in St Davids Town Hall every Thursday morning.
